I don’t think it’s exactly a secret how much we love banana recipes around here. Bananas are a staple in our household, bought primarily for the girls. Despite my best efforts to gauge how many we can consume, overripe bananas often end up on the counter.

Recipe for Mini Banana Muffins

Ingredients Step
3 ripe bananas Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
1/3 cup melted butter In a mixing bowl, mash the bananas until smooth.
1/2 cup sugar Add melted butter to the mashed bananas and mix well.
1 egg Mix in the egg, followed by vanilla extract.
1 teaspoon vanilla extract In a separate bowl, combine flour, baking soda, and salt.
1 teaspoon baking soda Gradually add the dry ingredients to the banana mixture, stirring until just combined.
1/4 teaspoon salt Add any desired mix-ins, such as mini chocolate chips or nuts.
Mix-ins (optional) Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
