Take me to a party, and I’m going to find the marinated cheese, crab rangoon dip, and bacon-wrapped little smokies pretty much immediately.
Over the last few years, I’ve been really into combining melty brie with buttery pastry. It’s pretty much the perfect appetizer combination! I’ve made apple butter brie bites and cranberry brie bites, and it was about time I made baked brie in puff pastry.
Hot and Melty Baked Brie Wrapped in Puff Pastry
There are about 100 different ways to make baked brie, and all of them are delicious. However, for me, there’s something extra amazing about pairing hot, melty brie with buttery puff pastry. In this recipe, I topped a wheel of brie with a combination of honey, fresh herbs, and toasted pecans, and wrapped the whole thing in puff pastry dough.
A sprinkle of flaky sea salt adds the perfect finish before baking, along with a final drizzle of honey before serving. The creamy and mild brie perfectly complements the sweet honey and toasted pecans, while the herbs and sea salt keep the flavors balanced. It’s neither too sweet nor too savory – just the perfect combination! Baked brie in puff pastry is not only an impressive dish that makes a great centerpiece for holiday tables or fancy dinner parties, but it’s also easy enough to prepare for game-day parties and cozy movie nights.
How to Make Baked Brie in Puff Pastry
Ingredients You’ll Need
- 1 (8-ounce) wheel brie
- 1 sheet thawed puff pastry
- 3 tablespoons honey
- 1 ½ teaspoons chopped fresh thyme
- ¼ cup toasted chopped pecans
- Flaky sea salt
- 1 large egg
Since there aren’t many ingredients in this recipe, consider investing a bit more in a good quality brie and honey if possible. Ensure that the puff pastry is completely thawed before beginning; the best methods are letting it sit at room temperature for 30-40 minutes or refrigerating it for a few hours. Toasting the pecans before use truly makes the dish shine.
Making this Baked Brie
To start, use a sharp knife to cut the top rind off the brie, leaving the sides and bottom intact. Set the cheese aside.
Unfold the thawed puff pastry onto a lightly floured work surface. Use a rolling pin to roll the pastry out to approximately 10×10 inches. Place the brie, rind-side down, in the center of the puff pastry. Top the cheese with 2 tablespoons of honey, thyme, pecans, and a sprinkle of sea salt.
Make an egg wash by whisking the egg with 1 tablespoon of water. Fold one corner of the pastry over the brie; brush the folded corner with the egg wash, then fold up another section of pastry, ensuring it adheres with the wash. Continue around the cheese, using the egg wash to secure the pastry in place.
Carefully transfer the wrapped brie to a lined baking sheet or lightly greased pie plate. Brush the top and sides of the pastry with egg wash, and bake at 400°F for 35-40 minutes, until the outside is golden brown.
Next, let the baked brie cool for 10-15 minutes to avoid burnt mouths from molten cheese! Before serving, drizzle with the remaining honey and garnish with additional toasted pecans and fresh thyme.
Serving Suggestion
We love to serve this baked brie with apple slices and crackers. It pairs excellently with crisp grapes as well.
Make-Ahead Tips
Feel free to assemble the baked brie up to 8 hours in advance. Just leave off the egg wash before refrigerating it, covered lightly with plastic wrap. When ready to bake, simply brush the top and sides with egg wash and bake as directed!
