If you’ve been around here for a while, you know that breakfast casseroles are a family favorite. They are not only delicious but also incredibly easy to make, making them the perfect option for a make-ahead breakfast or brunch.

There’s nothing quite like getting breakfast prep out of the way the night before. Allowing yourself to wake up to an easy, ready-to-serve meal means one less thing to worry about before your morning coffee.

While my Christmas morning breakfast casserole and other savory make-ahead dishes hold a special place in my heart, this cinnamon roll casserole has quickly become my favorite sweet breakfast option.

Ingredients Instructions
– 2 cans of cinnamon rolls
– 1 can of apple pie filling
– 3 eggs
– 1/2 cup of milk
– 1 tsp vanilla extract
– 1 tsp cinnamon
– Optional: Powdered sugar for topping
1. Preheat your oven to 350°F (175°C).
2. In a large baking dish, spread the apple pie filling evenly on the bottom.
3. Cut the cinnamon rolls into quarters and layer them on top of the apple filling.
4. In a bowl, whisk together the eggs, milk, vanilla, and cinnamon. Pour this mixture evenly over the cinnamon rolls.
5. Bake for 25-30 minutes, or until the rolls are golden brown and set.
6. Drizzle the icing from the cinnamon roll cans over the casserole, and add powdered sugar if desired.
7. Serve warm and enjoy!
