Pumpkin Marshmallow Coffee Syrup – A Delicious Fall Treat
Sweet and perfectly spiced pumpkin coffee syrup is a delicious way to dress up your coffee right at home. But don’t stop there! This luscious syrup is equally amazing on pancakes and waffles, drizzled over ice cream, or as a topping for cheesecake.

TikTok got me yet again with this one, but I can’t even be mad about it because this stuff is so good.
A couple of weeks ago, my friend shared a TikTok featuring a delightful recipe for pumpkin marshmallow coffee syrup. A true fan of making Starbucks-at-home drinks, I couldn’t resist trying it right away.
After tracing the recipe back to the original creator, The Thrift Witch, I gave it a shot the very next day, and I’m officially obsessed. It has quickly become my go-to for dressing up my iced shaken espressos, and I’ve been generously drizzling it over practically every dessert I enjoy.
If you’re someone who finds themselves sipping pumpkin spice lattes every autumn, this pumpkin coffee syrup is a must-try!
Pumpkin Spice Coffee Syrup, But Better
As a self-professed coffee syrup enthusiast, I frequently make vanilla and brown sugar syrups to enjoy instead of heading out to Starbucks.
Don’t be surprised if I’m whipping up batches of this pumpkin syrup all autumn long. While I love a traditional pumpkin spice syrup, this is even better. Upon my first taste, I found myself texting my friend, “This literally tastes like pumpkin pie.”
The syrup has a rich, luscious consistency that falls somewhere between a sauce and a syrup, making it versatile for various uses. The secret ingredient, marshmallow crème, lends both sweetness and an incredible texture, enhancing the pumpkin puree. Trust me, it’s an essential component you won’t want to skip!

How to Make This Pumpkin Coffee Syrup
Think making a fancy flavored coffee syrup at home is overly complex? Think again! This delicious recipe is ready in less than 15 minutes and can last you all week long.
To make this delightful pumpkin coffee syrup, you will need:
- ½ cup marshmallow crème
- ½ cup pure pumpkin puree
- ½ cup lightly packed brown sugar
- ¼ cup plus 2 tablespoons water
- 2 tablespoons heavy cream
- 1 teaspoon pumpkin pie spice
- ½ teaspoon vanilla extract or paste
- Pinch of fine sea salt

While I usually opt for jarred marshmallow cream, you can use homemade marshmallow crème if you prefer. You won’t use an entire jar, so save the leftovers for future syrup batches or delicious desserts like my s’mores pie.
Be sure to purchase pure pumpkin puree—not pumpkin pie filling. If you find yourself with leftover puree, consider making pumpkin pancakes, iced pumpkin cookies, or pumpkin spice cinnamon rolls.
I use my homemade pumpkin pie spice, but feel free to use store-bought. Avoid substituting with just ground cinnamon; the blend of spices really captures that pumpkin pie essence!

To prepare the syrup, add all ingredients except for the vanilla and salt to a medium saucepan. Whisk over medium heat, stirring until the sugar has dissolved, and the mixture is smooth—this should take about five minutes.
Once your syrup is ready, take it off the heat and whisk in the vanilla and salt. It’s now prepared for use!
Serving Suggestions
This pumpkin coffee syrup can be enjoyed immediately while hot or cooled down a bit before use.
Stir some into your hot coffee or homemade lattes, or enjoy it with your favorite iced coffee or homemade cold brew.
Once you get the hang of it, feel free to experiment! This syrup serves as a wonderful addition to homemade chai concentrate, and it could elevate a simple crockpot hot chocolate!
It goes beyond drinks—drizzle this syrup over vanilla ice cream, oatmeal pancakes, homemade waffles, or french toast casserole. For cheesecake lovers, it’s an obvious topping choice for your favorite vanilla cheesecake!

Storage Tips
Allow the pumpkin syrup to cool completely before pouring it into a clean jar or bottle. Store in the refrigerator for up to one week.
The syrup may separate a bit after being refrigerated, so be sure to give it a good stir or shake before use. When stirring, use a clean spoon to extend its shelf life.
