As I bask in the warmth of the season, I find myself always craving sweet, plump berries. Whether enjoyed with yogurt and granola or sprinkled with sugar over cheesecake brownies, summer berries are truly a delight. Ice cream, another favorite summer indulgence, also beckons. Despite owning two ice cream makers, I can’t resist the charm of no-churn ice cream. It’s easy to whip up and requires only two basic ingredients!
This past few weeks, inspiration struck to merge two of my loves: roasted berries and no-churn ice cream. The result? An irresistible No-Churn Roasted Berry Ice Cream recipe. To give it that exquisite depth of flavor, I incorporated Nielsen-Massey’s Madagascar Bourbon Pure Vanilla Bean Paste, which added both flavor and aesthetic with lovely flecks throughout the ice cream.
For an added twist, I used my friend Emily’s scrumptious recipe for roasted berry sauce, enhanced with a touch of cardamom and Nielsen-Massey’s Madagascar Bourbon Pure Vanilla Powder. After gently mashing the cooled roasted berries, I swirled them through the ice cream base, creating ribbons of berry decadence.
