One of my favorite summer events is approaching – the Fourth of July. The Cleveland area bursts into a celebration, boasting parades, fireworks, barbecues, and fairs in every little town surrounding the big city.
In recent years, since Elle was born, we’ve opted for a more relaxed approach to the Fourth. A simple barbecue with the family, followed by some fireworks, is all we need to make this holiday special.
This year will be no different—perhaps we’ll take Elle to a parade, followed by a giant barbecue feast with family. Of course, dessert is a must; after all, I do have a sweet tooth!
I discovered this delightful recipe for Chocolate Chip Cookie Ice Cream Sandwich Cake on the Karo® Syrup website, and it was an instant love affair. You can use any chocolate chips, any kind of ice cream, and decorate with any sprinkles you fancy.
Since this cake will make its debut on the Fourth, I’m planning to use festive red, white, and blue sprinkles around the edge. However, this dessert is suitable for any occasion — I genuinely believe ice cream is delightful no matter the weather!
This cake is essentially one enormous cookie ice cream sandwich, which can be sliced into generous or petite wedges. It’s perfect for accommodating guests with varying appetites. You could even opt for different flavors of ice cream on each side of the cake to delight your guests.
Making this cake is incredibly straightforward. All you need are two cake pans, a stand mixer, a springform pan, and top-notch ingredients.
Both the cookies and the luscious chocolate sauce utilize Karo® Syrup, which I absolutely adore. It offers the cookie dough and silky chocolate sauce a perfect sweetness, allowing the chocolate flavors to shine.
Whether you create this Chocolate Chip Cookie Ice Cream Sandwich Cake with vanilla ice cream adorned with red, white, and blue sprinkles or with strawberry ice cream and chocolate sprinkles for Valentine’s Day, you can’t go wrong.
This dessert is generous enough to feed a crowd or can be stored in the freezer for occasional indulgence, which I believe makes it one of the best recipes out there! Just be prepared to bake a little extra because it will be devoured in no time.
