In recent years, since Elle was born, we’ve opted for a more relaxed approach to the Fourth. A simple barbecue with the family, followed by some fireworks, is all we need to make this holiday special.

Recipe for Chocolate Chip Cookie Ice Cream Sandwich Cake

Ingredients: Instructions:
– 2 1/2 cups all-purpose flour
– 1 cup corn starch
– 1 tsp baking soda
– 1 tsp salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 cup brown sugar, packed
– 1/4 cup Karo® Corn Syrup
– 1 large egg
– 2 tsp vanilla extract
– 2 cups chocolate chips
– Optional: Pecans, ice cream, sprinkles, chocolate sauce
  1. Preheat oven to 325°F. Lightly grease two 9-inch cake pans. Line bottoms with parchment or wax paper.
  2. Cream butter, both sugars, and corn syrup in a large bowl. Add egg and vanilla; mix well. In a separate bowl, combine flour, corn starch, baking soda, and salt. Mix into the butter mixture followed by chocolate chips and pecans.
  3. Divide dough between cake pans, spreading to cover the bottoms. Bake for 20-25 minutes until light golden brown. Cool completely on wire racks.
  4. To assemble, line a 9-inch springform pan with plastic wrap. Remove one cookie from the pan and place it top-side down in the springform pan. Spread softened ice cream over it, then place the second cookie on top, top-side up. Cover and freeze for 2 hours.
  5. For the chocolate sauce, place chocolate, butter, and vanilla in a bowl. In a saucepan, bring cream and corn syrup to a boil. Remove from heat and pour over the chocolate mixture. Let stand until it can be whisked smooth.
  6. Drizzle chocolate sauce over each slice before serving. Optionally, roll the edge in miniature chocolate chips.
