Sometimes I’ll make a batch of strawberry popsicles, birthday cake ice cream, or rocky road ice cream. But lately, I’ve been opting for a box of classic ice cream sandwiches to whip up this incredibly simple yet delicious ice cream sandwich cake.
This dessert is the perfect summer treat for kids, but trust me, adults adore it too!

This ice cream sandwich cake embodies everything wonderful about summer treats. If you were one of those kids who eagerly anticipated the sound of the ice cream truck, you’re going to love this recipe.
It’s also incredibly easy and affordable to make. Simply arrange ice cream sandwiches in a pan and layer them with fudge sauce, Cool Whip, and chopped Oreos.
After allowing it to freeze, you can easily slice and serve it like an ice cream cake.

How to Make My Ice Cream Sandwich Cake
This is one of those recipes—similar to my chocolate-covered marshmallows—that is so straightforward it almost feels silly to call it a recipe. But it’s so delicious that I couldn’t resist sharing it!
Not only is it incredibly easy to make, but it’s also perfect for kids; they’ll enjoy assembling it and, of course, eating it once it’s frozen.
Ingredients You’ll Need
To make the classic version of this recipe, you’ll only need four ingredients:
- 14 Oreo cookies
- 8-ounce container Cool Whip (or TruWhip)
- 14 full-size ice cream sandwiches
- 1 (11-ounce) jar hot fudge sauce
Just by looking at the ingredients, you know this is going to be great. How can you go wrong with those four delicious components?
I usually opt for a jar of Smucker’s hot fudge sauce when making this ice cream sandwich cake, though you’re welcome to use homemade hot fudge sauce if you prefer.
If you’re not a fan of Cool Whip, you can always substitute it with whipped cream frosting.
Stick to full-size ice cream sandwiches; I always need 14 of them for a 9×9-inch pan. Keep in mind that if you choose mini ice cream sandwiches, you’ll need significantly more of them.
Making This Recipe
Grab your 9×9-inch pan—preferably one that’s about 3 inches deep, though a shallower pan can work too! Line it with parchment paper.
Combine about ⅔ of the chopped Oreos with the whipped topping and set it aside. Don’t throw away the remaining Oreos; you’ll use them later.
Layer half of the ice cream sandwiches in the bottom of the baking dish, trimming some if necessary to ensure a snug fit.
Spread half of the fudge sauce over the sandwiches; depending on the brand, you might need to warm it slightly to make it easier to spread. Then, apply half of the whipped topping mixture.
Repeat the layers and sprinkle the remaining chopped Oreos on top. Cover and freeze for at least 3 hours before serving.
Recipe Variations
The recipe below is for what I consider the “classic” version of this ice cream sandwich cake, but don’t hesitate to get creative!
Try using various flavors of ice cream sandwiches: Neapolitan, double chocolate, strawberry, Oreo, or M&M—they would all be delicious!
Square or rectangular ice cream sandwiches will fit together better in the pan, but using round ones is also possible if you’re okay with cutting them in half or quarters for a better fit.
Feel free to change up the sauce and mix-ins, too. Think chopped toasted nuts, fresh strawberries, chopped candy bars, or your favorite cookies. You might even want to swap out the hot fudge sauce for caramel or strawberry sauce!
